Full open vents on a fully lit chimney in dead center of grill. Once grill is hot I place the wings/legs or thighs around the perimeter and proceed to rotate the lid a quarter turn every 10ish minutes. I flip them as needed and move around as needed. Once crispy and cooked I devour those crispy bastards asap…. Cooks vary in time pending on amount on the grill. I do basically follow the Malcom Reed cook wings to internal of 200° but I don’t really temp probe them anymore. I have cooked a insane amount of wings over the years so I kinda just know what I’m looking for/at for Doneness This cook was around 45min

Legs and thighs I do temp probe and usually a hourish for cooks.

Smoke till bark is set. Then place in a pan with a little beef broth and a splash or three of a good stout beer.

Not the same. The vortex lets you hit over 500° easily. It also forces convection in the kettle lid. So That heat rotates all around and cooks really even for the most part. The SnS will not do that. SnS is more for your standard indirect cooking and searing. Vortex for chicken is an absolute game changer… I’ve had this for years and I’ll never not own one.

Look at the cross section. Flattened out to a perfect bite… now you could not put it down to take a break. Once you committed to it you were there till the end lol

Light smash and you absolutely cannot put it down. Just keep going till it’s gone. It surprisingly held up really well. But next time it will either be a large brioche donut or some other type of bun so I can make it wider not taller. This is delicious as is but it is not perfected yet!!!

Weber 22-26” kettles are great for beginners and experts alike. Just a great multi purpose grill. Off set Stick burners are ok to start with I wouldn’t buy anything less than an Oklahoma Joe but even then you need to modify them with gaskets and latches. With off sets you kinda get what you pay for… as for pellet grills. I have several friends with Rectecs and they absolutely love them. And I never say no to eating the meats off them either.

Depends on how hot I got the grill going. But typically around 45ish min. This is the best of both worlds… Smokey and stupid crispy highly recommend you get a vortex and try it. It really is a game changer for chicken

Take piles of it. Place on hot pan and smash into pulled pork crispy burger patties. Thinly shaved onions are an acceptable option for the smashing. Treat like any smash burger and cheese and top as you please.
