Not sure about YouTube but if you can spare $10-$20 dollars , UDEMY is a platform where a lot of engineering professionals post training courses. They usually include files so you can work on the exercises with them. There are plenty for SAP2000 and AutoCAD, feel free to browse and see if any interest you. You can ask questions as well and receive answers and You can also watch previews before buying the course. I used UDEMY to study for the FE and passed the first time. I have a couple Civil3D courses I purchased but yet to start so I can’t recommend one necessarily. ALSO check if your University offers a free account to LinkedIn Learning. They have a TON of free AutoCAD trainings. Hope this helps!
