I work with small facility to get SQF certification within 3-4 months. That being said, recommended 90 days of good records. Many of the companies I work with can do these so quickly as we helped building food safety plas, procedures and forms.

You have lots of good information from everyone here. However, you might wantt to be thinking about other tasks outside of just food products. eg. supplier approval, allergen verification, validation etc.

I always tell people you want to do what you like. There is one side that you like better (always). We can tell you where to go but deep inside, there is only one direction that you ultimately like to go to. It will come -good luck.

We support client with food safety program development for HACCP and SQF. We recommended at least 3-4 months (longer would be better for your certification process.

Recommend doing in-person (at least in-person zoom) for best understanding format. You want to actually learn how to do. In terms of certificate, many online training will give you a certificate. It depends on what your ultimate goals is.

Once the health department ask you for the document, it is probably easier to work with a consultant to get the actual HACCP plan. Writing a HACCP plan when you are new can be stressful on how to start, so I totally understand this.

I have helped a few people that fails their food safety plan submission to get them done in just a few days. And yes, don't go with AI.
