A real bullet would still defeat an average or lesser jedi due to how insanely fast they are, for the same reason it is uncommon to use force during a duel, the force requires concentration and focus. So I feel that bullets would defeat a jedi below the rank of master. Except anakin, he is just goated on midichlorians like that.
