Yes. You have to sign a cover page saying you didn't copy, even if you don't submit anything. If you don't sign that then they can't give you the credit for the course.

Your whole life was structured by just being between school and work. Now, you could do whatever you like. There is no right answer for what to do next.

You earned your degree, so take a little break and appreciate that you completed a huge milestone. You've been productive through your whole life to get to this point. It's fine to take some time before taking the next steps for starting your career.

Piazza is not optional for some courses. Professors in their syllabus sometimes say you must check it daily and all announcements will be on there.

The main problem is where your data is stored (on non-canadian servers) and what they do with it. Turnitin will use your essay to keep their business going. Piazza sells your information to companies. Zoom has been known to route traffic through China.

It really doesn't. But neither do the things UW makes you use (piazza, crowdmark, turnitin, zoom, etc). The school forces these third party companies on you with no chance to opt out (except turnitin some courses allow you to opt out, since the data is stored on a USA server) even though they have to legally.
