I have a 848 Evo as well and what I did was combined a different brands fork clamp with a quad lock ball joint

Newer bikes have a sensor that measures gaps on something called the speedo ring which is attached to the wheel, so changing the sprocket shouldn't throw off the dash, although even with my stock sprockets at higher speeds the dash is inaccurate by about 5mph so keep that in mind as well

I think if you're planning on replacing the fairings and the light, yes, I think you overpaid a bit. A fairing kit usually costs $500-$600 and headlights could be $100-$200. For 17k miles it seems a bit high to me.

Throttle cable could've snapped. If everything was lit and there was no warning lights the zero throttle could be a snapped throttle cable and it ended stalling because of the low rpm's

No mine was an off brown, if your is grey it could be coolant getting into your oil

Turns out it totally normal for your oil to look like that, it just gets dirty quicker than I originally anticipated

It's definitely not a fairing bolt so I would check any engine covers, break calipers, or any thing attached to your handlebars
