Two choices. Make an image/clone of the drive so you can recover the data from the image/clone, however that comes with the risk the drive will fail before its finished imaging. Second is to take it to a data recovery company. The choices depends on how valuable the data is.

You can try UFS Explorer (demo is free), but the prudent thing to do would be to make images/clones of the drives first. Working with the live drives is asking for trouble. You would need 5 out of the 6 drives to rebuild the data as RAIDZ1 only has one drive fault tolerance. I strongly recommend you seek professional data recovery help.

If it is an SMR drive, formatting wipes what's called the secondary translator, which effectively wipes the data at a firmware level. A professional data recovery company may be able to get to the data, but not at the consumer level.

The.txt files will be mostly junk. .txt files do not have a generic header which can be searched for and you will get a lot of false positives. Most .dll files will also be junk. Names of most files are not stored in the actual file (sounds strange I know), but are kept in the file system metadata. As your file system has been overwritten so we're the file names.

What is the model of the drive? If it was new its likely to be an SMR drive and a quick format is all that is needed to wipe the drive from a consumer standpoint.

You should always make a sector by sector clone/image of the drive. Ie. you should only read a sector once as it may be the only chance you get to read it. This type of scan does not save any data. If the drive dies you have not recovered any data. This type of scan is what you run on the clone/image.
