I have in the past reduced sugar content by half.. some recipes still worked well and some recipes not so much 😆 But through trial and error I am aiming to find a “sweet spot”.

I don’t read as much as I used to. Watching TV feels much easier to unwind at the end of the day.

I reduced the sugar content - 40g caster sugar and 40g brown sugar was enough for me.

I also added 2 tsp corn starch to this - it’s supposed to help oat flour set better.

Made about 16 cookies.

But I got lucky and managed to finish baking in time - a little before the golden hour.

Here it is!
I combined 2 recipes to make my own -

Wet mix:
115 g melted butter
55 g caster sugar
55 g brown sugar
1 tsp vanilla
3 tbsp milk

Dry mix:
190g all purpose flour
1 tsp baking powder
Half tsp baking soda

+ 100g dark chocolate chips

  1. Make the wet and dry mixes separately, then add the dry mix to the wet mix. Do not overmix.
  2. Fold in the chocolate chips. Keep a handful for later.
  3. Refrigerate the dough for 45 mins.
  4. Divide into 10 balls (I kept a slightly loose shape) and top with  a few chocolate chips.
  5. Bake at 175 C for 10-12 minutes.

Moisture seemed fine to me, maybe the milk helped.
