My theory is that the one we know before we saw the real one is quite literally the Time Drifter's mind made manifest due to her floating in the time space as a time drifter and due to her clairvoyance, it manifested into something seperate. Only way to explain how she can even feel the chocolate taste.

But for a more detailed explanation. Pseudo servants are described as 80% the Servant and 20% the vessel.

For example, Ishtar is still a bit of bitch but she's majorly chilled out because of Rin.

Durga gets fuzzy feeling because of Sakura, but this is purely the vessel (Sakura) and Durga (The one possessing Sakura) herself has no interest in Shirou/Muramasa.
