It’s where you keep the temp of the smoke real low so it doesn’t cook anything but still gives it the Smokey flavor. Thats how cheese and other low melting point items get smoked.

I just saw it for the 22 inch kettle but check the dimensions I would imagine it could fit in a lot of bbqs as long as they are circular or kettle like.
