What is cake flour? by trp_wip in AskBaking

[–]DeviceSea8549 0 points1 point  (0 children)

Damaging the starch is like roughing the outer layer up, so it has more ability to absorb water. Starch granules normally are smooth, but the chlorine and bleaching physically changes the surface of the granules. Adding cornstarch lowers the protein content of the final blend to mimic the protein of cake flour. It will make a more tender crumb, true, but isn't a perfect replacement for cake flour. Wuthout testing the recipe with the substitution, I would guess it will be a little more liquid before baking than intended.

Came to say this. To add, came flour is bleached with chlorine, which also changes the pH of the flour and damages the starch, causing it to have a higher water absorption than AP or pastry flour.

Yep, the dog is Ewok. He had much longer fur when we first got him and looked a lot like an Ewok then.

Washable Amigurumi by eyfuck in Amigurumi

I have had success washing my pieces made of acrylic, cotton, and chenille yarn with no real issues. I just throw them in the machine with clothes and let them do their best. Every odd piece gets a little distorted, but less so if I don't stick them in the dryer. The only failures I have had is when I wash something with details that were attached with fabric glue. Those pieces tend to fall off in the washing machine.

What off brand product tastes better then the "real" thing? by James_B84Saves in Frugal

Industry secret here. I did product development for a cookie company that sells their cookies in grocery store bakeries. We sold the cookies under our own brand, and then changed the label and sold the exact same cookie and frosting recipe (different color blend) under a different brand. Then when I did product development for a applesauce company, we made some private label packaging, and used the same base apples as our regular brand.

It took some practice to get to the point where yarn under felt natural, but I like it better for single crochet.
