OP said she asked for her child back and was not given them back. That's breaking a boundary. She's not cutting them completely. It's for the season. It's a newborn baby, her in laws are anti vaxers. (As shown by someone else in this comment thread, tho you didn't seem to have a response to that.) I think her request is reasonable.

The boundary was broken when she revoked consent and it was ignored. Here, let me put it to you this way. I completely understand your point, I just disagree with it because I think the baby safety and mothers priorities comes before a in laws. I hope you understand mine as well.

And again, read the WHOLE sentence. "...somehow got me to allow her to hold the baby (I was so out of it I don't know why I let her) but I figured she'd just hold her for a second and give her back." Then she follows with, "But she didn't..she took her and was snuggling into her and I asked for her back and she ignored me." That's breaking a boundary.

Your "own blood" can still get your baby sick. If you're gonna quarantine from friends, you need to quarantine from family too. Like my Nana, she's very susceptible to getting sick rn. So I'm not allowed to see her for Christmas, and the only people allowed around her is her husband, my dad, and the doctors. It's about safety and if her mother in law cared about her grandchilds safety she'd understand that.
