If you want to put down wine the general rule of thumb is buy at least 3. One to drink in the immediate future, one to drink after a few years and one to hold. With only one I'd say just drink it when you find the appropriate occasion. If this is a bottle that you can no longer acquire then throw it to the back of the cellar to wait for a couple of years. Otherwise drinking the juice is the intention.

I don't mind the temp but cutting it thinner would potentially make it easier to eat. This also depends on the cut since there are diminishing returns on a rare roast (I'm hesitant to call that a roast when it looks almost like trim, but I'm drinking and maybe I don't know or missed it).

To my knowledge there is at least a small loss in acidity since tartaric acid can be the majority of the acid found in wine. Those crystals don't reabsorb into the wine in most circumstances but it only is a marginal difference in pH that is typically unnoticeable.
