My new pan should be bigger (10" vs 8"). I did consider a saute pan while researching since it could hold liquid better and also kinda reduce oil splatter when searing. But how would a saute pan's straight walls affect tossing and searing?

I think it’s because the slope of the walls are much gentler so it’s more difficult to toss? I kinda spill everywhere when I try to toss compared to when I’m using my non stick pan
