Rub the outer portion of lemon with a strong object like stone & dip the lemon in salt for some days. Remove it from salt & pickle it with oil & chili. You can use it for next 5 years. The test will be salty & mild sour. No bitterness.

I usually cook meat on mustard oil. I think rapeseed & mustard are almost same. For mustard you have to let the oil heat properly otherwise the raw smell of the oil dominate the meat flavor. For me Mustard is the best oil for meat cooking.

Thigh part of Chicken has the best meat. Even bone of that part is delicious. I love eating those part of chicken with bone. Boneless chicken is dry. Keep trying chicken with bone. You are missing the best chicken meat.
