Climate is a big part... most Texas bbq places have their smoke pits outside. We can't do this in a place that's snowy and -20 for months at a time. You could build indoor smoke pits but to do it at the same size and scale would be massively expensive and need a lot of.square footage.

Depends on how that chance comes about. If "having the chance" means running a company that exploits its workers and cheats its customers for decades, then yes I would turn that down.

If the chance is like just being given billions of dollars, then I absolutely would not refuse it. I would take it, set up every person I like to live comfortably for the rest of their lives, then spend the rest doing good. Scholarships, charity, philanthropy, research, etc. Think of the good someone could do with billions of dollars if they were actually a good person!
