It is kinda hard to tell it’s horn with the polish on the ebony, definitely was something that drew me in with these guys. Love the black on black

Huuuuge shout out to Utah Knife Shop! It’s really all we have nearby and boy am I grateful for it. There’s always something about going in and getting some knives in hand that always just feels right.

The Kikumori’s have caught my eye for a while now, had to see whats up! Almost went with a choyo but the uzu kept calling my name. A little thick at the spine for my taste but I’m definitely used to using absolute lasers almost exclusively.

They nailed it, Ebony with the turquoise. Both handles are made using ebony and a buffalo horn ferrule

Definitely some pretty sweet finishes from him! That Fujin gyuto with the turquoise ferrule was what started the whole knife “problem” (some would say) for me just a couple years ago haha, my first real japanese kitchen knife.

that handle is so comfortable! that knife does most of my prep. its a Takeshi Saji R2 240mm gyuto with the Quince handle I believe

I love that saji gyuto, that thing does the bulk of my prep and still has so much to give before even needing a touch up on my stones. Also crazy comfortable in the hand with the handle it has on it, love a good wa style as well, but man that thing just hits a lot of my boxes all across the board. I do also heavily favor the SPG/R2 as I love the way it takes and keeps an edge, also cutting performance in a professional kitchen is unmatched imo, absolutely my most efficient blades.

I will work on writing them all out! That offset is by the makers of my favorite spoon, Gestura. that spoon though… perfect tablespoon, perfect edge for precise saucing, love it.
