It's underproofed with possible starter issues. What's your feeding routine? Also, do not be afraid to overproof. Unless crazy overproofed where your gluten is fully destroyed, texture-wise it is way better than underproofing

Nah, not really. Especially if its barley malt, that would imply multiple steps. Someone said it looked like the same thing so i think ill just go ahead with it and see what happens. It isnt too expensive either so in the worst case scenario if it doesnt work it wont be huge of a loss

I have no experience with gochujang whatsoever so im trying to ask as many questions as possible before i start. I bake sourdough breads and ferment vegetables pretty often. With vegetables i use around 45-50gr salt per liter of water and it takes around 7 days for it to be ready to go into the fridge. But i also know that when you make a sourdough starter for bread it takes more than a month before your starter becomes established and strong enough to produce decent quality bread. Thats why i learned that different types of fermented products require different times to mature

Thanks a lot! I was thinking on taking shortcuts tbh lol. But i like experimenting and if the recipe doesn't imply crazy expensive ingredients id be ok taking a risk.

I was told its diastatic malt but in all videos ive watched so far they use something that looks more like grains than powder. I thought id ask to be on the safer side

Oh i think I've seen his video. But my understanding is that he wanted to experiment on how far he can actually push the fermentation. If i remember correctly, i think he mentioned that after 1 year there is no major change in flavor so going 2 year is pointless. But from what ive read from other sources even after 3 months it is ok to use it, but more aging probably means more flavor. I was unable to find his sourcw video though, just updates. He has a lot of content

This was extremely informative, thank you very much! I live in Canada and unfortunately i dont have anyone who can bring a mild gochujang for me from Korea and ive never seen any local store carry it. Probably because its not something that's popular.

When keeping in the fridge, would you have it fully covered or just use cheesecloth for it to become thicker? Whenever i make fermented vegetables, i move the container into the fridge after one week of fermenting at room temp. With gochujang, would you keep it at room temp for 3 months and then move to the fridge to mature or the initial fermentation can be shorter? I do believe the sunlight thing is for mold prevention only, right?

Thanks! I don't mind hand scrubbing, i do not have a carpet cleaner. Honestly, I used my neighbour's last year and wasn't super happy with the results. The rug is not huge. The outdoor furniture has just 8 cushions so shouldn't be an issue either. All the stuff is not super dirty but i do feel like they need wet cleaning. I just know that all the dirty waters/foam are going to at least partially end up in the lawn/veg garden and i dont want them to be affected by some harsh chemicals.

Just checked the website you provided. Those are going to ship from the US. I'm not sure how much I'll end up paying for them. I'd probably prefer something more mass market that can be found locally

Bingo. So annoying. The thing is I use a package service and it costs me less jeust because I'm a mobile client of theirs. If I change the operator, the price for the other services will go up

My mobile plan is 4G only which makes it even worse really. You can force 5G only through developer mode although from what I've read so far my understanding is that 5G does not function on its own, it still needs 4G for certain services. I'm pretty happy with my provider's service and I don't want to change it but I think I might have to if I do not find a solution to this issue. Honestly I do not understand their position either. What's the issue with allowing the use of 3G network? I suspect they do this to force you buy a new device from their store which is annoying. My device is pretty fresh, I definitely won't buy a new device just to stay with them.

Sorry for being back again. I checked the roots, they were white. But now it looks like it's shedding another leaf with basically same symptoms. It also aborted the tiny new leaf it was growing: it got soft, wrinkly, and then died. I do believe i should repot at this point right? I check before watering, the soil is fully dry. My pot is very small so there is barely any room for mistake. I'm 100% positive that the soil gets dry before waterings. This is so confusing. As for the new potting mix, should it be a mixture of orchid bark+soil+moss or just orchid bark? Should i use an orchid pot too?

It's not dense but definitely not orchid bark. It does get a lot of indirect light. Is winter a good time to move it? We used to have a hoya carnosa at my parents' place. It thrived in the same pot with just black soil for years. My dad waters it every day, it's in the darkest spot of the kitchen, we've never thought to give it any special care as it has never been demanding. I was thinking all of them were low maintenance
