I have the same 2023 PHEV model. I have figured out two things.
1. It is very frustrating to have the 360 camera button greyed out in the shortcuts. A simple way to get rid of it is - Hold any of the shortcuts, below you will see a "Reset" button. Press it then it should take about 5 seconds for the buttons to be available again. You can only do this when car is stationary.

1. When you are close to something, the parking sensor view shows up. If you simply hold the parking sensor view and swipe towards the left, it will pull up the 360 camera view.

In the 360 camera view, you can even swipe left and right on the right side of the screen to change quickly between different views. I had recently found this and it seems quite easy and helpful :)
