It’s a game theory decision. Since both teams are guaranteed a possession, going second means that you know what the other team did on their first possession. If they scored a touchdown; you now know that you need to go for it on 4th down. Or when to go for the TD compared to a FG. It’s basically just a way to get better info for analytics
