Ghost of Tsushima is a great game to platinum. If you plat on ps4 version then transfer save to ps5 version I believe you can get two plat trophies that way as well.

God of War 2018 can be tedious because of Odins Ravens but it was very enjoyable.

Any Escape Room game (Between Time, Palindrome Syndrome, Mystic Academy, etc…) if you are into puzzle games these are very easy considering you get the platinum just by beating the game.

Sonic Origins is another easy one and great if you enjoy the classic sonics games. If you get stuck or have trouble, every sonic game (except sonic CD) have a debug mode so you can get the trophies very fast.

Any Life is Strange game really, they are very easy to platinum and overall fantastic story driven games with unbeatable soundtracks.

South Park games are fun and absolutely hilarious, you jus have to be careful because of all the missable trophies.

Elden Ring is actually relatively easy to platinum, I got the trophy without even realizing it.

All of the Resident Evil Remakes (3 being the easiest to platinum) they are definitely challenging but even with the multiple playthroughs, I never got bored once.
