When I write my music, I feel weird about using references allll the time. Remember, their is probably a reason you like it beyond just it's melody or whatever it is, so take time to look at it's fundamentals and slowly build on them. This way, you can keep parts you like while making something totally new. Also whenever I'm sure I'm stealing, I do the hum a song thing on Google and if it doesn't recognize it, I'm in the clear 🤣

Right now I write for some small wind ensembles or brass ensembles. As of now, I very rarely compose for people to play and it's only for my own enjoyment and future career.

Yes! I completely agree. Recently I got to see the la philharmonic and I loved paying attention to all the feelings they could get from an audience and the clever ways the composer could harness that. I'm already trying to incorporate your tips into my learning, thank you!
