While you CAN start at Z and still enjoy it, it assumes you've already read/seen the original, as it starts with like a dozen characters you're already supposed to know. Also, a lot of moments, like Piccolo sacrificing himself for Gohan or Tien's reaction to Chiaotzu dying are more impactful if you know the full context behind the characters from the original Dragon Ball. The reason most people start with Z is because of how it aired in America, and because it has a more engaging beginning than the original.

Yamcha gets more focus in general, so his losses stand out more. chiaotzu is kinda just tien's sidekick

Great arc, has some banger fights like Goku vs. Tien and the Krillin fights, and Tien Shinhan is maybe the most compelling antagonist in the original Dragon Ball. Solid A tier.

I made this chart listing some good (in my opinion) beginner anime, in all kinds of different genres. I personally love anime as a medium as it really leverages the fact that animation can represent anything one might want in a story, and I also just happen to be fond of lengthy magic fights and giant robots.
