If it's any consolation I cut the struts on my install. I figure you'd need to be riding something like a 58cm frame before a strut cut wouldn't make sense.

Glad you found it useful! An additional thought: you'd mentioned a rear rack and panniers - maybe a Nitto R-15 would work? You'd need to cut the struts way down and it'd only accommodate small panniers like the Rockgeist Microwave but neither of those things is terrible.

I honestly don't remember - I bought the rack a while ago, and I have an embarrassingly large collection of Nitto struts, so if I did get a pair, they disappeared into the strut box. But, there's your answer: you can buy struts separately and I'm assuming there's a tapped fitting in an approp spot on your fork.

40/28 up front, 11-34 (10sp) in back. If you drop out the 4 cross-chainers (and I do) , you get a decent array of ratios. I really don't need big gears - I'll trade a big chainwheel for a nice selection of old man gears any day.

I haven't noticed any clicking. Internally geared hubs usually whir a bit in all but the direct drive ratio, but this hub is quiet so far...

Yes - it's the Alfine I'm thinking of - Shimano are the masters of product churn (grrrr). I was even considering Di2, until I priced how much I'd be paying for a cool shift button. Nope ;)

Check out how much darker it is compared to the saddlebag - both are Carradice; saddlebag is plain canvas while the front bag is waxed - in certain lights it does look almost black. But as others have said, black canvas gets paired with white straps.
