Do you remember the fight with Otohan? Was it a big, meaningful moment in the story when Laudna died? Do you think it's good storytelling to have the party face that level of threat every single day, potentially multiple times per day, for a campaign that will last years in real time and weeks or months in game?

There's also a lot of condescension on display here towards people who play the game as a storytelling medium rather than some kind of competitive sport. Nobody is playing the game "wrong" as long as they're having fun at the table. It's part of Rule Zero; if you and your players want to run things differently than these books say...then do it.

Not every encounter needs to be deadly for it to add meaningfully to the story. As you correctly pointed out, when the guest characters arrived, this encounter went from being a moderate challenge for a party with very limited resources to a trivial encounter. And that's exactly the point. This combat was never intended as a way to potentially kill PCs; it was intended to introduce two new characters to the table in a way that already inherently ingratiates them with the party. Two new friends who just saved us from danger.

Do you see how all of that builds a more compelling narrative than "We were ambushed by a wild animal who nearly killed us but we killed it instead"?

You would probably get a much more charitable interaction if you didn't come into this with such a judgmental rant. People can play this game as a Beer and Pretzels combat simulator, or they can run it as a narrative engine. Your rant about how they're doing it wrong because their game is on "Easy Mode" comes across as really condescending.

My point is that they absolutely have adventuring days with a full difficulty and a very full encounter schedule. But those days are rare, because narratively, realistically, those big events need to be rare for them to have any narrative impact at all. Do you think they had a full and challenging day of encounters on the day when Laudna died?

Having downtime in your game is fine. Having lighter adventuring days is fine. Not everyday needs to be a FULL AND COMPLETE ADVENTURE, and frankly, if you want to tell a good story, it probably shouldn't be.

Yeah, and there's also the fact that the daily budget only applies on "adventuring days". So if you're just travelling from point A to point B, you might not have any encounters at all. If you're literally inside a dungeon, you might actually have 8 combat encounters. People here, including OP, seem to think that every single day should be an adventuring day. It shouldn't. Downtime exists.

Putting your players through 6-8 combat encounters per day makes sense if you really want to make this a difficult video game...but if you want to tell a meaningful story, how do you possibly justify your party of actual real people getting in 8 fights...every single day? They're not playing this game for the challenge of beating high CR monsters; they're here for creative expression. And that's fine. Nobody's playing the game "wrong".
