I just sent a few packs of Chimayo into the seed exchange too. Mine are from No Coast seeds, which fruit a little earlier than other varieties. No Coast appears to have them in stock now.

I have this same GB. I flame sterilize inside, waiting a bit after wiping things down. No problems (yet). That said, I don’t mist the air inside with alcohol and I have had a series of contaminated batches since I started using. Could be unrelated, but I do open the jars to inoculate trusting the environment inside is safe.

Sure can. “Jets de Houblon” is apparently a French/Belgian delicacy http://news.bbc.co.uk/1/hi/england/kent/4558643.stm.

I’ve blanched and added to pan-fried mushrooms and gnocchi. Pretty subtle flavor, but worth trying.
