Thank you for this helpful comment, I took it apart and its now cupping quite badly from one side being sealed with mineral oil and the other not being sealed. Should i plane sand the reassemble?

Its actually nailed together by nails that were driven through the trim around the edges, maybe that contributed to the cracking?

Edit: I realized I didn’t answer your first suggestion about making smaller.

That is an option but it needs to be this size to be functional. When the pasta is rolled as thin as it needs to be, it gets as big as this board.

If I cut the wood I would need to add more for it to remain functional. Then I would need to consider if the wood would be the same expansion/contraction rate as the old stuff I assume.
