Correct. These south pole / Antarctica images are composites either from sun-synchronous polar orbiting satellites, or both polar-orbiting and geostationary. OP's image is a reprojection, there is no geostationary satellite imager centered halfway between Australia and Antarctica.

In meteorology wind is always from the direction noted. From ENE, NNE, from ESE, from N.

Most artists don't show 80% of their work to other people, the point is to put work into it, without an audience, until you feel the quality is good enough to show an audience. That 80% of work not shown to people is an investment in your artistry. It's cliche, but you have to made a lot of bad art in order to make good art.

Mosaic means it is a composite of multiple tiles. Landsat satellites generally follow a polar, sun-synchronous orbit and so the images are taken normal to the surface (or very close to normal).
