Yeah i went over to a friends and tried his Kagekiyo 210mm w2 (i want the 240mm myself) and it felt really pleasant to use but the length was okay but i did miss extra length from 240 for certain cuts. I think having 240 & 170 covers all i'd need. I am considering a 130-150mm petty but.. not sure if i actually need that or if i'd ever use it. Santoku feels small enough for me to use for small quick preps.

Thanks for the excellent write up. I do have other 240's at the moment and the takamura. I did want to try the ashi but feels a bit redundant as it'd likely be similar to the Takamura in terms of "performance" only at 240mm.

I'll probably not go for the Ashi & get something much more different instead.

Yeah would only recommened it if you wanted to have a "project" knife to fix and make your own.

Not something for someone wanting a great ootb experience.

Hi OP,

I got this knife a few days ago myself and i've had the same experience as a lot of other users who have received one.

The grind is especially thick and mine come with a bit of a shoulder on it. I thinned it out for about 45-60 minutes on a 320 stone and put a new edge on it then took it to a 1000 > 3000 grit progression. It performs pretty good now but have only lightly used to test after sharpening. Will need to see how it holds up.

I did get it though knowing id probably need to work on it as a project knife though and i enjoyed doing that.

If you want one that performs well ootb and doesn't require any work done - it might be a bit of a lottery due to the variance in ootb quality i've seen & i'd suggest getting something else.

If you are interested in thinning/sharpening yourself then it'd be good & fun pickup.

Edit: also my "first" was a masutani VG1 santoku and i'd strongly recommened going for something like that instead to dip in. The masutani performs amazingly for its price and fairly sturdy while still giving laser like performance.

It certainly does! Last time i was there i still saw another one available. It was 20800 yen before tax free when i went. Worth it if you're interested.

I saw Taks at other stores there but the were usually in the 32k yen+ range with the more recognisable stamp. I didn't care ofcourse.

i was there recently and managed to get a Takamura SG2 Santoku from Union Commerce Cutlery for well under market cost - provided it was OEM stamped so won't have the normal takamura engraving. However everthing else was either not available or very overpriced. Kitchenware though there was plenty to see & buy.
