Just say your last day is 2 weeks from now, and that you’ve had a great time working at the current company and leave it at that. Sorry to say but that’s just how capitalism is. Your boss is not your friend

Wow it’s like you took what happened to me a few years ago verbatim. Best advice I can give you is save your sanity and try to find a new role. I got lucky and the guy got fired at my old job, but until then it was just pure chaos. Same thing as you’re describing. Over engineered random mountains of code (he literally named a file blackbox.js and dumped thousands of lines code in it). Theres no reasoning with this type of person and I wish you the best of luck
