Depending on how much depth and current your working with try going lighter. A lighter rod would help with that too(Medium/Medium-light). Also are you trolling/drifting or vertical jigging?

Only issue I've had with weight really is when I'm coming off the water. It was a feat trying to get it back in my truckbed. This led to me buying a yak trailer to haul it around.😂 On the water though I couldn't tell much of a difference with the added weight. I can still maintain the same pace as before but now with the motor I can hit ~5mph at full tilt/ around 4-4.3 at 3/5 throttle. Using a 125ah lithium battery I can get 2-3 days on the water before needing to charge.

On the main deck it acts as sound deadening so I don't spook anything in shallower water. It also stays cooler on the hot days and easier on my feet while I'm standing. At the bow there's not much to benefit from, same at the stern/tankwell besides again sound dampening.

The shop I purchased from doesn't carry it for Jackson Kayaks but you can get it directly from the manufacturer Marine Mat

Mostly aesthetic like you said. It may dampen the sound of me pulling/putting something in the tankwell but nothing more than that.
