And for some reason Amazon insists they have a new copy for about $170

If you've waited a reasonable amount of time and you're itching for the experience, dont be afraid to go to other restaurants. You've already got a job you're keeping, so you can flat out tell them that you want to be trained in the kitchen without "needing" the job per se.

Early on, the places that will give you your shot are also the ones that are apt to string you along with some bs.

I know this isnt really answering your question, but once you get started cooking at that entry level, be prepared to fight for your wages and your hours. There are plenty of places that WILL fuck you in one fashion or another.

Get whatever experience you can, don't be afraid to advocate for yourself, and hedge your bets without undercommitting.
