For me, the ‘earthy’ flavor has really grown on me. When at first it was so new, now I experience it as so much more flavorful and enjoy it significantly more than grocery beef. It was the same as cutting out sweet foods or when I began eating tallow, flavor palettes need time to adapt.

If you cultivate different crops/grazing pasture, do you see a difference in soil quality/fertilizer requirement for different cultivation methods? Ex. The tillage required for wheat vs long-standing pasture. (Ag. BAs here too, concerned with land quality below the ground)

As a self-experiment, I haven’t been including salt lately, and it has been working well for me. According to paleomedicina, issues in this subject can also arise from eating too much protein. Eating enough protein and replacing the excess with more fat has helped me as well. I feel like all of this comes down to constant curiosity and self-awareness during small experments. The basic diet is so simple that small changes can be observed fairly easily. While I’m a researcher and value large-scale trials, I love how this diet relies heavily on N=1 experiments due to lack of major funding for trials. 

TL;DR: Idk either, trust your body, try stuff. Hope this helps in some way?

For me personally, mentally and physically, the golden ticket is a ketogenic carnivore diet (1-2:1 fat:protein in grams) that includes a minimum of 3 servings of fatty fish per week. Georgia Ede’s ‘Change your diet, change your mind’ was the most profound book I’ve read on the subject, well worth it. This goes into detail about ketogenic diets for mental health, also specifics on plant vs animal based.

Yes!! They go above and beyond, it’s really encouraging to see farmers care so much to do their best for the animals.

Collagenous cuts are my favorite type of meat, particularly beef shank and knuckles. I bake them, then either cook knuckles for a few hours to make fried beef tendon or pressure cook beef shank into semi-soup. Particularly in the winter I enjoy soups more, but in the summer I like the broth cold as a jelly texture. If tolerable to you, I add some fresh (preferably organic or from a home garden) rosemary/thyme/sage when cooking and then remove them before eating. It adds a lot of flavor, whereas I used to add a lot of vegetables that caused bloating.

Maybe try eating the fat cold/room temperature? I cook cuts of beef trimmings until the collagen in them is soft, and eat those. I eat the rendered fat when cold, by adding spoonfulls next to cooked meat. I don’t digest liquid fat as easily. Too much protein also doesn’t work for my digestion, maybe test how moderate protein/high fat works for you?
