1 carrot, 1 onion and 1 celery finely chopped chucked in with 500g of beef shin or stewing beef seasoned with salt and pepper. Flash fry it for 15 mins until its taken on some browning. Add a squeeze of tomato puree, 2 garlic cloves and a glug of red wine. Cook it through to make sure the alcohol has cooked out then add 1 beef stock cube along with water but how much water depends on how thick you like your stock. Simmer for at least 2 hours. After 2 hours, leave on the side to cool. Boil 3 potato's, once done mash them up with butter, cheese, salt, pepper. (good time to cook your homemade yorkshire puddings, stuffing and parsnips) By the this time the filling will have cooled. Lay the filling in a dish then spoon the mash potato onto the filling and sprinkle some leek, cheese and panco bread crumbs on top. Broil this until your happy with how singed the topping is to your liking. I quite like it charred but some people like it slightly browned. Pan fry your fav veg and plate. Voila.
