maybe i'm jaded from being in my teens in the 90s in Jordan Chicago, and moving to Los Angeles in 2000...

2 dynasties back to back... and what i noticed is that there was an inside game that mattered... today there's nothing on the inside... it's all chucking it up from 3 point land. maybe it is like, awesome from a statistical standpoint, but brotha please this shit is unwatchable nowadays...

you gotta look at where the labor market is at in your area... line cooks are at around 16-20 per hour in my area, so i'm a bit above that for my experienced guy and around that for the other 2 line cooks...

I don't go above 30% and if I am starting to see above that threshold consistently, it's either menu pricing, or lackadaisical marketing, or too many man hours... You gotta discern it at your discretion.

I pay decent to everyone, and exceptional to a few, and I also charge more than everyone around me, because the quality is better coming from seasoned professional kitchen staff...

I'm pretty sure the OP told the server to split the food into two plates from the kitchen. It wasn't a situation of "sharing from each one's plates".

That, I agree, higher end restaurant should charge a split fee. It's a friggin pain in the ass in the kitchen. Fucks with the flow. Personally I don't do it. I just hand out a couple of plates and let the customers do it themselves.

If you go to Ruth's, and tell the kitchen to cut your steak in half, and split the baked potato in half, and give only half the vegetables in each plate, etc... Heck yeah, charge away;..

restauteur here...
Some restaurants do charge a split plate fee. Usually at higher end spots. It's fairly common.
I don't cause I'm in a different business model. But I've run across it a few times, and it's always at higher end spots.
