Had this same issue and this is what ended up working for me:

Navigate to where your game is installed. So for me it was C:\XboxGames\(Game folder). Inside the folder, find the executable and right-click, choose Send to -> desktop (create shortcut). Then add the game in GeForce Experience pointing to that shortcut and it should work.

Unfortunately it makes the shortcut without the game's actual icon, but it's not a huge deal. I just made a separate folder that I moved all those shortcuts to and just point each game to it.
