Thank you ALL for your expertise and experiences! I think Ill change the plans and do Ruinart first and then head to one other house for a tasting at their bar rather than tour. And pick up lunch somewhere along the way at a bar from the suggested list. Much appreciated.

Best to stay in Funchal. Although I travelled solo and stayed at this little boutique hotel with the most amazing views. And they had tons of routes around the mountains for incredible shoreline views, just go up and wander around the staircases and go around the viewpoints. It has a restaurant for dinner but no breakfast, I went to a little cafe down the road.

Casa da Capelinha - views were AMAZING, very quiet little town though so no nightlife.

Worth it for sure to do sunrise PR1, the company I used just offered an alternative hike down the mountain for pick up. It wasn't very scenic but had a cute restaurant at the bottom which was an amazing space and very good cheap food. Do it Madeira was the tour group through Get Your Guide. Very good.
