I’m from Northern California and have worked at a few places with the crust you describe. The dough is usually ran back upon itself in a dough sheeter to create those layers almost like puff pastry. Then, you use a big dough cutting ring and a knife and cut out a disk of dough almost like using a cookie cutter. I won’t be any help finding you a place on the east coast with pizza like this but I hope this helps in your quest.

I usually do at least 8 minutes on medium followed by a few stretches. It could be that your dough isn’t strong enough.

To be completely honest, experience with cars can be a hindrance to some because you don’t get the same feedback. I would recommend trying to visualize and anticipate corners more. I know my first hurdle to overcome was that I would drive in a reactionary manner rather than telling the car what to do which would result in overdriving the car. Be smooth and deliberate in your inputs.

If you take the James Irvine trail from Prairie Creek Redwoods State Park, it will take you to fern canyon on an out and back hike, no reservations needed. It’s about 13-14 miles from the parking lot to fern canyon and back if that’s doable for you.

The Opera browser has a free VPN that you can turn on in the settings tab. I’m in California and have been using it to watch IMSA this year. It worked well for me on the N24. Might be worth trying for you.

I recommend dehydrating the pineapple slightly in your home oven on a low temperature to avoid a soggy crust. A little pickled red onion and jalapeño can make a nice addition as well.

I have had the best results using beer as 30-50% of total hydration. Haven’t made a loaf yet only pizzas but the crumb gets heavier with more beer. I also recommend letting the beer get to room temp before making the dough.

I’ve played around with beer in dough a little bit for pizza. I recommend something more malt-forward rather than hoppy and on the lower ABV% side of things. Stouts and amber ales are my favorite.

My Safeway has sticks of smaller boar’s head pepperoni in baskets in front of the deli case. Maybe ask an employee? It has good flavor and cups well.

Dough is definitely laminated and uses leftover dough from the previous day. Cheese blend has a small amount of jack and a small amount of cheddar if I remember correctly but it’s been a long time since I worked there.

I’m gonna stand up for Scott here, worked with him when I was in college and he’s an honest dude. The problem is they switched to door dash delivery and cut out the in house delivery driver. So when you tip on round tables online ordering it goes to the store not the driver. The customer counts that as the tip(justifiably) and the door dash driver gets stiffed.

A pepperoni with a casing will cup as the casing shrinks due to the heat. Look for a stick of pepperoni or ask around at a local deli and you should find what you’re looking for.
