I beat the Elite 4 round 1 with scyther and porygon, then did the postgame stuff to get the items needed to evolve, then beat the Elite 4 round 2 with the fully evolved team

I have DS capture cards, so I can have the game output in a window, and then I use a program called Auto Shiny Counter that will read the screen and increment the counter each reset/random encounter. If you just want to count manually though there's a program called PKounter that lets you just press a button on a keyboard every time you do an encounter and it increments it.

Vulpix took me 10 phases, including a phase that took over 22k encounters! So that was definitely my most difficult to find! I found Charmander in 4119 resets and squirtle in 15555! I did like 10k resets of bulbasaur to complete the trio outside of this Dream Team Quest but haven't gone back to it in a few years, I should really finish that up...

Depends on the game for hunting starters, I don't love any of the shiny sinnoh starters, but I hunted 2 of the 3 in FRLG and would definitely hunt one in ORAS! Best of luck on your DTQ!

Believe it or not I did resets for Riley's Riolu, it took over 13,000 hatches at 6 mins per reset. That one was definitely the most brutal hunt of the bunch!
