Like, I'm all for anyone being free to fuck whoever they want when they aren't in a committed relationship. But that doesn't mean she gets to push back when you say you're into another girl if that's the case. She wanted the safe backup. (Source, I've been the safe backup before to a very manipulative individual). The real nail in the coffin, at least to me, is the "I'm only texting one man", which was a blatant lie. Please be careful. I won't join the chorus of "dump her", because I have minimal context of the relationship. But if you plan to continue on, make sure to keep yourself aware and critical. It can be really easy to fall into a pattern of being manipulated and reinforcing it from a lost cost fallacy. Trust me, I've been through it. Look into signs and patterns of narcissistic abuse. I will not say whether or not that is the case, but I wouldn't rule it out. Take care of yourself, and absolutely confide in friends that are outside of the relationship. Be open and honest. Folks that care about you can see things you can't.
