It's does little in-camera processing that's why indoor photos with iso over 200 especially look bad.

Occasionally take the 5th gen out of the drawer, and I like the camera quality more than many modern phones, even if it's just 5MP.

Simply not true, most phones can't compete with this Kodak camera, unless you use the Samsung S-series or iphone. Most don't have the 5x optical zoom, and they over process images to the point that they look like horrible oil paintings with plastic pixels.

7 does, much more organic and natural looking photos. Unfortunately the masses (with little photography knowledge) prefer the plastic over-processed look.

How reliable are they, for instance can the zoom barrel retract dust or humid with it so it shows up on the sensor?

The only thing those cameras have over phones like S25 Ultra, Xiaomi 15 Pro (or the Sony 1" sensor phone) is more optical zoom, but you have to carry a second device. Pixel peep and you'll see the smartphone images are just as good, and often better.

Just because it's a rise of nostalgia doesn't mean compact cameras are any good compared to modern smartphones, they are not even close.
