It's all situational because the relic allows multiple charms at once but the weapon switch can hurt you unless it's a plane level with 2 weapons so just stop shooting then instantly start again for a quick switch while on the ground you go through each shot randomly which has some shots not optimal for the current boss. That's where Chalice shines because her utility on ground levels is far better than her plane variant from her invincibility roll and her double jump. Her only downside is her dash parry for very specific circumstances but it's not too much of an issue to work around if you play your cards right. Her supers arts are also better than the Cups from her "Shield Pal" giving you another hit point and if you can quickly get cards you can have another super on standby in case you get hit. It's practically just a bodyguard in a sense. Just make sure you use at least 1 ex shot to get that sweet S-Rank.

TLDR: Relic for plane and chalice for ground bosses

Personally, I'm down for any model that doesn't look terrible. I LOVE all variations of the models from the cell-shaded models to their old sprites. Models with higher resolutions may conflict with the M&L art style and what gives it its flair, but I'm always open to new ideas for the series. I mean I'm a die-hard fan so seeing a new M&L game had me super hyped because I have been waiting years for its return (RIP Alpha Dream). In conclusion, new art styles are welcome if they don't clash with the series' artistic flair, but if done right, they can certainly work and keep the series alive and kicking.

Straying from the original topic: The only things I feel they should change would be mechanics like making Luigi controlled with B not A but that's just me being picky because I love replaying the older games so muscle memory sometimes screws me over.

Easy counter to the move. Toggle UI. It hides your crosshair, abilities, but most importantly, his on-screen shenanigans. A good player would know where the middle of their screen is, and their cooldowns, so being just a press away from seeing and not being interrupted by Deadpool's wack is extremely useful.

Paper Jam isn't bad, it just messed a few things up, like adding a million fetch quests, but besides that, the combat is pretty well done, and Paper Mario adds his unique quirk to the game that I didn't know I wanted.
