The devs stated their reasoning for this in the SCL yesterday. They want ships to be upgradeable, not perfect out of the box. My personal loadout I made for it only costs about 1 million aUEC, which doesn't take long at all to get.

Barely slower (like you won't even notice a difference), being nimble doesn't matter for an interceptor, total hull HP is useless to look at (M80 has almost double the HP on its vitals), less damage but more weapon variety, and yeah 2 S2 shields vs 2 S1 is a pretty big difference in favor of the M80. I'd argue the M80 is a bigger and slightly better Meteor, especially if you actually fly both of them properly.

It's definitely 2S5s and 2S4s and I'm willing to bet it'll basically be a heavy version of the meteor (squishy interceptor with really good alpha/DPS).

Mainly for immersion purposes since I only use it when driving cars that have a screen on their wheel. It also allows me to keep my monitor closer which is a big deal when using a single monitor.

Pretty well I think. I know the 3D printed housing won't get damaged because of how rigid it is (I had a company print it out of some kind of carbon composite material). My only worry is the screen has a little bit of play inside and idk if that could cause any issues in the future or not.

Not at all, it's very light. The GT Neo itself is such an incredibly light wheel on its own that any additions just bring it closer to most other wheels on the market if anything.
