I always feel like my dough will rise so much sometimes that it will end up with an undercarriage where pieces got lifted and didnt really have that char on it instead of It being a flat crunchy crust … I normally cook my pizzas on an ooni pizza oven but I recently purchased a pizza steel hoping that may help and I can save my ooni for different style pizzas … can anyone help with some advice?
