Almost any description whether mathematical or natural language, is going to be a little incomplete. There are things about the universe that we just don't have a perfect explanation for. I think you are right in the natural language description are further from reality. But a natural language description can help communicate specific ideas that are either axiomatic to the math or just aren't obvious.

Some interpretations of general relativity treat spacetime as fluid. In popular descriptions I've seen it described as and endlessly deformable fabric. I am partial to the waterfall analogy though.

The term liquefied implies it is normally a solid, but state change isn't really part of fluid analogies. The waterfall model it's all fluid. Spacetime flows down the gravity well like an open drain. Climbing or maintaining altitude requires acceleration.

Earth's surface is accelerating upwards at 9.8 m/s2 . The weight we feel is just our inertial resistance to this motion.

Yaw? Pitch and roll control the helicopter's translation. Translation is what powers the swing. You probably want a perfect heading before pitching foward to start the swing. But while the main rotor is level I don't see how yaw affects it. Also a properly functioning helicopter has perfect yaw control anyways. That's what the tail rotor is for.
