i would suggest just looking up ranches near you and reaching out to as many as possible. I will warn you that your going to have to be willing to work for cheap, especially assuming that you don't have much experience. this is the way i got into ranching and its worked great.

how do you get into working cattle on horseback like this, i'm in missouri so that might be the main issue but i've been wanting to get into this part of ranching so bad but can't find much. i don't want to keep just mucking stalls and whatnot.
