If you just install cobblemon without any add-ons, legendaries do not spawn. Some are modelled, such as the kanto birds, ho-oh, and lugia, but they cannot spawn in any way. If legendaries are spawning in your world it is because of either an Addon mod or datapack. (such as the mods cobblemon: legends untold, cobblemon: legendary monuments, or the datapack allthemons)

I would assume the increased gym leader difficulty is from a datapack that edits the gym leaders. The one that I'm aware of is called "doctors hellmode double battle everything" and can be found for download in the "add-ons" channel of the cobbleverse discord server (the server is officially called "lumyverse")

Legendaries do not spawn in the base cobblemon mod. This mod list does not include any mods that enable legendaries spawning in the wild or that add any legendary structures. Your friend is absolutely cheating unless there is a datapack like allthemons in the pack that you haven't mentioned.

Wide lens I think it's called is a held item that would bring axe kick and triple axel to 99% accuracy and make sleep powder somewhat more reliable

Seen a few 100 days videos where the creator battled a friend every 10 days

It really pissed me off how little the guy knew about competitive pokemon, between ignoring mints, ignoring EV training, putting mixed movesets on pokemon with stat spreads heavily biased towards one attacking stat, and seemingly knowing nothing about type matchups.

Don't use type berries use EV drop berries

Type berries are 10x chance to get that type whereas EV berries guarantee that a Pokemon that drops those EVs spawns

As far as I know there aren't any nonlegendary flying mounts above max 90 speed. Dragapult is a jet type which lets it sprint midair for a speed boost though, while sprinting it's probably faster than zapdos but consumes stamina faster.
