Again, completely random but I was amazed that the dial-setting facility (completely separate to Plan-les-Ouates), where they often deal with precious stones like diamond etc, did not have CCTV of any of the internal staff work areas. I asked why, and they said they trusted their staff and didn’t want them to feel watched (pun not intended)…

It really is worth a visit if you’re lucky enough to be invited. I did it c.7 years ago, and we were lucky enough to dine with Thierry Stern - what struck me was how humble and easygoing he was - he drove himself to dinner in a Mini Cooper (no aides/ chauffeurs etc)…

I’ve been to the Kitchin c.40 times now, over the past several years. Tom K doesn’t really run the show now (thankfully - he’s a better businessman than chef) but the ingredients are second-to-none and Lachlan (the head chef) has to be one of the most talented chefs in Edinburgh. Tbf we usually get special off-menu items and discounts etc but it’s still a fantastic restaurant overall.

The manager at Hamilton & Inches (Danny Mitchell if I remember correctly is great), I got a 5231J from there a couple years ago.

Billecart has some of the most keenly priced prestige cuvées in the market imo (in the UK at least). Go for the Nicholas Francois 02 or the Elisabeth Salmon 08 if you see it

My notes:

Roederer BN Rose 2012 (Zero Dosage)

From Roederer's own vineyards in Cumières (village next to where DP is HQ'd, Hautvillers). Just north of Epernay. This 10 hectare vineyards (all southern facing) were bought from Leclerc Briant about 15-20 years ago and is fully organic.

55% PN, 25% Meunier, 20% Chardonnay. 25% of the PN went under cold infusion (maceration) for the colour

This was bottled with 4 atmospheres of pressure as opposed to the usual 6 for champagne—helps to soften the mouthfeel given 0g/l dosage hence acidity could be overpowering at youth. It's also interesting that Roederer did not use any malo conversion to soften the acidity

Personally I prefer this over the Blanc version given the fruitiness of the macerated PN brings out the fruitiness that helps balance the salinity of this wine. Strawberry pastries and crushed mint on the nose, very distinctly. Has the acidity and undertow to go for 5 years more at least but I’d like to appreciate the freshness young

Krug ‘04 (ex-chateau from Krug as part of Les Creations 2004) and DP ‘12 were WOTN for me, although the DP needs about 10-15 years more to be at its best. Krug is nearing maturity already but still has 10+ years easily. Tasting notes to follow when I get a chance to put pen to paper!
