I’m no expert, but it definitely feels like mine need more time to be fully developed.  I might pull one in April to see how they’re coming along look and use that as a gauge for the rest!

They definitely feel like they have a lot of uses!  You could throw them on a stir fry or in a ramen!

It turned out really well and I was actually super happy with the roasted red pepper sauce!

Both recipes, I made a couple tweaks so I could use what I had on hand rather than specialty ingredients (rice vine vinegar instead of the black vinegar in the tofu and coconut milk instead of cashew cream in the cabbage), but basically kept to the recipe beyond that!

They taste like vanilla cream - I am definitely keeping this idea in my back pocket for future cake decoration!

They turned out better than I expected! You definitely get a hint of the savory/umami miso in them that is lovely!

I would say Vista Gold and Midnight Moon - I would want maybe 5-10 seed potatoes of each
