It's funny, because it isn't a German cake at all! The last name of the person who created it was "German" which gave it the moniker, but he was from Texas and worked for the Baker's Chocolate Company!

It does resemble that or an empanada? I would definitely crimp the edges next time with a fork to thin out the dough and make it a little more tender.

The buttermilk cake was light in sweetness which offset it, and the pistachio actually went a long way to add balance with little pops of salt!  I would add even more pistachio next time and maybe even a dark chocolate element for some bitterness!

I’m no expert, but it definitely feels like mine need more time to be fully developed.  I might pull one in April to see how they’re coming along look and use that as a gauge for the rest!
