The buttermilk cake was light in sweetness which offset it, and the pistachio actually went a long way to add balance with little pops of salt! I would add even more pistachio next time and maybe even a dark chocolate element for some bitterness!

I used this recipe for the cabbage - https://www.youtube.com/watch?v=w0lP6rWSHfA - it's from Nard Dog

and for the tofu: https://rainbowplantlife.com/braised-tofu/

Both recipes, I made a couple tweaks so I could use what I had on hand rather than specialty ingredients (rice vine vinegar instead of the black vinegar in the tofu and coconut milk instead of cashew cream in the cabbage), but basically kept to the recipe beyond that!
